We're Cooking up some Taiwanese Popcorn Chicken at 3PM Central Time for today's live video.

This is our fifth live and they've been a lot of fun, thanks to everyone who joined!

Taiwanese popcorn chicken:
1 lb boneless skinless chicken thighs
2 tbsp soy sauce
1 tbsp Shaoxing wine (substitute with dry sherry cooking wine or mirin)
1 thumb-sized piece of ginger
1 1/2 tbsp garlic
1 tsp white pepper
1 1/2 cups THICK sweet potato flour
25-30 leaves of fresh basil
Seasoning mix for after frying
1 tsp white pepper
1 tsp salt
1 tsp five-spice powder
1 tsp sugar

What's up my friends, It's Friday and that means it's time for another live cooking session and today I'll be making some amazing Uncle Roger-approved egg fried rice!

We'll be live today at 3PM Central time, the ingredients are below if you wanna cook along with us or on the replay.

Egg Fried Rice Recipe:
5 large spring onion sliced
2 Fresno chilis diced
3 large cloves of garlic
3-4 tbsp peanut oil
2 tbsp beef fat
3 large eggs
8 oz ground pork or beef (optional)
4 cups cold, cooked rice
4 tbsp soy sauce
1 1/2 tsp sesame oil
1 1/2 tsp white pepper
1 tsp MSG
spring onion tops for garnish

Live Salmon Cooking Masterclass Tomorrow at 3pm Central time my friends!

I didn't want salmon!! I said it four times!

when I was in my late 20's I got to cook for Will Ferrell salmon quite a few times actually.

Tomorrow I'll share that story while teaching you a perfect technique for exquisite salmon that has never failed me.

LIVE STEAK MASTERCLASS ALERT!!

This Friday, April 26th at 3pm CDT (1pm PDT, 4pm EDT)

I'll be doing a live steak cooking masterclass where you can join in and cook along with me in real-time!

It will be a great opportunity to level up your pan-fried steak skills while hanging out with myself and Marcus in the kitchen.

Also, I would love to answer any questions you might have with any downtime I have during the live, please leave some questions right here in this community post rather than the live chat as it will be easier to organize for me.

Below is a list of Ingredients and Equipment you will need if you plan on cooking along with me.

Ingredients:
1 8-12 oz steak preferably 1 1/2 to 2 inches thick, I'll be using a New York strip or a ribeye myself.
1 medium shallot
2 cloves of garlic
3 sprigs of thyme or 1 sprig of rosemary if you prefer
2 tbsp unsalted butter
neutral oil ( I used avocado)
salt and pepper

Equipment:
Stainless steel, cast iron, or carbon steel frying pan
Metal spatula
A Spoon
Cutting Board
Knife for slicing the steak
digital thermometer
resting rack or a couple of forks
