Hi everyone,

I'm so sorry I've been missing for so long. If you're interested in what happened to me and the channel, I recently did a podcast episode with Keizo Shimamoto who will be taking over the hosting duties for the Way of Ramen podcast talking about why I fell off the planet. TL;DR I had some health issues from either eating too much ramen or the stress of the channel that all went away when I decided to take a short break which then turned into a much longer break.

I did not plan to take that long break last month but being the bonehead I am I spilled a cup of water on my editing computer which completely bricked it. I live on and island that does not have an apple store so I had to send it away for repairs and after a month away I just got it back last week. Now just 1 week later it doesn't turn on again. Gonna try to edit the new video on my MacBook air but if you've been wondering where the new ramen videos went, they went with my computer lol. Pro tip, don't drink water next to your expensive laptops.

Hi everyone! I don't do this very often but if you haven't yet watched my latest video, it would mean a lot to me if you checked it out. Yamagishi-san was not just a legendary ramen chef but also a legendary human being. Erik Bentz chef /owner of Cafe Mochiko in Cincinnati who helped me make this accessible for us home cooks in the west is also a fantastic ramen chef and my ramen senpai. I adore both of these guys and I put a lot of work into this video (not to mention this was up there with one of the best things I've made on the channel so far). Hey everyone, just wanted to give you all an update on why there hasn't been any new videos on the channel for a bit. My son recently went back to school in person and I'm responsible for dropping him off and picking him up and helping him with his homework. I actually don't help him, he does it himself, but due to this, I just don't have enough time to film ramen videos. Real ramen takes days of 8 hours+ to make and I just can't squeeze it in. In addition, the studio house I was filming in is currently being repainted so I can't even get to all of my stuff.

All that being said, I was getting a little burnt out on ramen. I have a bad habit of going HAM on things I enjoy so much so that I eventually begin to not enjoy it. I loved making ramen but the youtube grind is real and it really can mess with anyone's head. This month is mental health awareness month seemed almost poetic that I was forced to take somewhat of a break and recharge and regain some perspective.

While I'm taking a break from ramen videos, I started a second for fun channel where I'm posting shorter, easier Japanese recipes that I translate and try out from Japanese youtubers. These recipes are really for chefs, more for normal people like me. If you'd like to check it out, I'll be posting more there until I can do my next ramen video (which is a big collab video similar to the sano san video).

TL;DR I made free site ramenpopups.com/ where cooks can list their events and ramen eaters can find good ramen in their area.

If you’re watching videos on how to make ramen, chances are you love to eat it but don’t have great options in your local area. That’s where I was too. Though over the year of running this channel I’ve surprisingly learned that getting great ramen locally for a lot of people isn’t as impossible as you would think. After connecting with many passionate ramen cooks from around the world, I’ve seen that some of the best ramen outside of Japan is served by fellow ramen nerds at small, local popup events.

Oftentimes, the ramen served at these events matches the quality might find in Japan but unless you’re in the know and follow these people on Instagram, you will never know that they’re doing it because of the small quantities they usually serve.


That’s why I spent the day yesterday putting together a small website called ramenpopups.com.

It’s a free to use community calendar where ramen cooks can post their popup events or kit sales and connect with local ramen fans in their area.

The whole site is free to use for everyone so please check it out. I just put it up yesterday so I’m hoping more chefs add their events to it and it can really become a place to check regularly when you’re looking for good ramen made by passionate people in your area.

Please check it out and if you’re a cook who’s doing a popup in the future, please submit your event.

I just put it up yesterday so it’s still a work in progress. My goal is to make this a central hub for ramen cooks to connect with potential fans which could eventually lead to them to bigger opportunities.

The next video is one I've wanted to do since the beginning of this channel. I did not know enough to pull it off a year ago and even now, I have doubts that what I made tastes like what I'm supposed to be tasting but I'm gonna put this one out there and if in the future I feel more confident to do it again, I'll give it another go. Might be a little delayed because it's a huge and involved video but here's a sneak peek of the source material.
